Logo for a Belgian-style craft brewery

Fat Abbey Brewing Co. is a small, artisinal Belgian-style brewery in-planning that will brew Belgian- and abbey-style and influenced beers and serve a limited menu of Belgian-style cuisine. The logo should represent the longstanding brewing tradition of the Belgian Trappists and abbeys.
We have come up with one novice draft concept which is viewable at:

In the draft concept logo at the URL above, please notice the wide (fat) abbey and the wood barrel behind it. One detail missing from this image would be a spigot typical of a wooden beer cask in the center-bottom below the banner. The lion in the large center window is from the coat of arms of Belgium, known as Leo Belgicus (Latin: the Belgian lion). The lion there to convey that this is a Belgian-style brewery, but is is optional if that idea can be expressed simply by the overall logo or by other imagery. Additionally, we added the text 'Est.' and '2014' on each side of the brewery name on the banner to denote the year the is established. This additional text is optional for the final logo design. The font is at your discretion but should have that European old-world feel.
The final logo is not limited to a version of the draft concept above. Please be creative with or without it.
While an abbey is typically of a religious nature, we wish to remain secular and focus primarily on the Belgian brewing tradition. No religious marks or symbols should be included.

The fewer colors the better due to larger printing costs with more colors. Ideally, the logo should be usable in color, greyscale and black & white.
